Did you know George Washington frequently carried pecans in his pockets, and Thomas Jefferson, dedicated part of his time to their cultivation?

Pecan Cottage Rolls

A delicious vegetarian alternative to sausage rolls.

  1. Place eggs, pecans, onions, soy sauce and cottage cheese into a food processor and process until fine.
  2. Transfer to a large bowl and mix in carrot, breadcrumbs and oats.
  3. Cut pastry sheets in half and brush lightly with milk.
  4. Divide mixture into six even portions and spoon down one edge of each half sheet. Roll to enclose filling.
  5. Cut each log into 6 even lengths. Brush with milk and prick with a fork.  Bake in a hot oven (200°C) for 15-20 minutes or until crisp and golden.

Note: Makes approximately 36 party size rolls that can be kept frozen for 2 months
